Made this and loved it! So easy and tasted fabulous! I didn’t have mushrooms so used onions and had peppers instead. I used pre-cut chicken that was already chopped up into 3/4” pieces and put it in the Instant Pot with the veggies and cheese sauce. Added a splash of white wine to the pot before putting it on “high”. It worked perfectly, pressure released in about 7 min, added chicken with sauce in remaining time. It was incredibly flavorful and went really well with the sourdough bread I had for dinner!
This is a great recipe! I used ½ cup of flour instead of almond milk, and it worked great. I used a pressure cooker in my Instant Pot, and it worked too! I also added in red pepper flakes for a little extra kick! Definitely a good one to have in your arsenal!
Wonderful hearty sauce! This tastes great over pasta. I used pre-cut chicken thighs with one whole breast. I left it in the fridge overnight to let the flavors meld. I sautéed the chicken until just brown before adding the rest of ingredients to the instant pot. I increased the pressure to high, set it on 'cook' and let it cook for 6 minutes. I added the chicken to the pot with the sauce and allowed it to cook until the internal temp reached 165. I let it sit for 3 minutes before turning off the instant pot. I added the chicken to a greased baking dish and topped it with parmesan. It was delicious!
